What makes a chef knife "the best"?
A chef knife is judged on four things: how sharp it gets, how long it stays sharp, how much abuse it tolerates before chipping, and how easily it comes back on a stone. Those four properties pull against each other. Harder steel holds an edge longer but is more brittle; tougher steel forgives a careless twist but dulls sooner. The "best" chef knife is the one whose steel, heat treatment and geometry land in the right spot for your kitchen, not the one with the longest spec sheet.
Marketing muddies this. "Japanese steel", "German steel" and "surgical stainless" are descriptions of origin or grade, not performance. The blade is only as good as the alloy inside it and the furnace it went through.

Hundreds of alloys exist, but a handful account for nearly every serious chef knife on the market. Here is how they compare.
AUS-10
A Japanese stainless steel with roughly 1% carbon, chromium for corrosion resistance and a touch of vanadium for fine grain. It hardens to around 59–61 HRC, takes a very keen edge and sharpens easily. It is the core steel in our Feather Forge line, wrapped in 73 layers of feather-pattern Damascus.
SLD tool steel (San Mai core)
SLD is a Japanese cold-work tool steel, chemically close to D2, with high carbon and around 12% chromium. It is very hard and wear-resistant but only semi-stainless on its own, which is why it is typically clad in softer stainless steel. 10Cr15CoMoV
A cobalt-enriched Chinese stainless steel developed as a peer to VG-10. The cobalt lets it reach higher hardness (about 60 HRC) without giving up much toughness. It is the core of our Silver Dynasty and Damascus Dynasty knives.
10Cr17MoV and 7Cr17MoV
The workhorse stainless family. 7Cr17MoV (comparable to 440A) sharpens in minutes, shrugs off moisture and suits cooks who want zero-maintenance performance; it is the steel in the Torii line. 10Cr17MoV carries more carbon for better edge retention and is the core of the Bara Forge knives.
VG-10 and VG-MAX
The Japanese stainless steels most premium mass-market knives are built on. Excellent edge, good corrosion resistance, moderate toughness. If a knife says "Damascus" and is priced above $150, there is a fair chance it has VG-10 in the middle.
X50CrMoV15 (German stainless)
Softer (56–58 HRC), tougher and easier to sharpen than the Japanese steels. It will not hold a screaming edge for weeks, but it will survive bone contact and a trip through the dishwasher that would chip a harder blade. This is what most German-style chef knives are made from.
High-carbon (non-stainless) steels

Powder metallurgy steels (SG2/R2, ZDP-189)
Made by atomising molten steel into powder and pressing it under heat, which gives an extremely fine, even grain. These reach 63–65 HRC with edge retention that lasts months. They are also expensive and can chip if you pry or twist. Great for a laser-thin slicer, overkill for a general-purpose chef knife.
Hardness explained: what HRC means for you
Rockwell C hardness (HRC) measures how far a diamond indenter sinks into the steel. For kitchen knives the useful window is narrow:
- 54–57 HRC: soft, very tough, dulls quickly. Budget stamped knives.
- 57–59 HRC: the German sweet spot. Forgiving and easy to maintain.
- 59–62 HRC: the Japanese sweet spot. Sharper, longer-lasting edge with reasonable toughness. Most of our knives live here.
- 62+ HRC: specialist territory. Superb edge, more chipping risk, harder to sharpen.

Beyond the steel: geometry, balance and construction
Steel is half the story. A thick blade in a great steel will still wedge in a sweet potato. Look for a blade that thins to around 0.2–0.3 mm just behind the edge, a spine that tapers toward the tip, and a balance point at or just ahead of the bolster so the knife does the work. Two quick checks tell you almost everything. First, hold a sheet of printer paper by one corner and slice down through it; a sharp, well-ground edge glides without tearing. Second, slice a ripe tomato using only the weight of the knife. If the skin splits without pressure, the edge and geometry are right. Repeat both after a month of use to judge edge retention. What is the best steel for a chef knife?
For most home cooks, a Japanese stainless steel in the 59–61 HRC range such as AUS-10 or 10Cr15CoMoV gives the best balance of sharpness, edge retention and low maintenance. If you want maximum edge life and do not mind a heavier knife, a San Mai blade with an SLD or similar tool-steel core is the next step up.
Is a harder chef knife always better?
No. Above about 62 HRC, gains in edge retention come with real losses in toughness. A very hard knife will chip if it meets a bone or gets twisted in a squash. For everyday cooking, 59–61 HRC is the sweet spot.
Does Damascus steel make a chef knife sharper?
The pattern does not cut; the core steel does. Damascus cladding adds toughness and protects the core from corrosion, and the layered outer steel is easier to thin on a stone.
