Our Knife-Making Process
The process begins with raw Japanese steel, similar in quality to damascus steel, chosen for performance. Artisans heat the steel in traditional forges, shaping each blade by hand on power hammers to compress grain and ensure structural integrity. Unlike mass-produced knives stamped from sheets, this hand-forged method enhances strength, balance, and long-term durability. Each blank is normalized, straightened, and checked repeatedly before progressing.
The blade is then quenched in oil to harden it, resulting in a Rockwell Hardness rating of 60 HRC, typical of elite Japanese blades. This gives the knife a sharp, long-lasting edge. Tempering follows, relieving stress and adding toughness. Each knife is then belt ground by hand to refine the edge, define its geometry, and polish the blade. The handle is fitted and contoured for comfort, and the knife undergoes rigorous final inspection before packaging.
Steel Selection and San Mai Structure
We use premium Japanese SLD steel for its superior hardness, edge retention, and resistance to wear. By constructing our knives with a San Mai structure, hard steel sandwiched between softer stainless outer layers, we ensure maximum cutting power where it counts: the edge. This also reduces overall cost while offering enhanced durability and corrosion resistance, with a rugged look to match. It’s a blend of tradition and efficiency, resulting in the exceptional everyday performance of the dynasty series and the nomad series.
Heat Treatment and Hardness
Once shaped, blades are oil-quenched to lock in a Rockwell Hardness of 60 HRC+ matching the specs of elite Japanese knives. This creates a razor-sharp edge that holds up through months of daily use without losing bite. After quenching, every blade is tempered to relieve internal stress and ensure toughness. The end result is a knife that stays sharp, feels powerful, and resists chipping over time, even under demanding kitchen conditions.
Grinding and Finishing
The sharpness and feel of a Cooking Guild knife come to life during the finishing phase. Each blade is belt ground by hand to refine the edge, adjust geometry, and reduce drag. After grinding, each blade is polished, fitted with a contoured handle, and carefully inspected to ensure it meets our standards, inside and out.
