This Spiced Apple Cake with Caramel Cream Cheese Frosting is perfect for getting cozy in front of the fire. The cake has a delicious spice flavor and is topped with a creamy caramel frosting. Ingredients Cake
- 2 1/3 Gluten Free Baking Flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/4 tsp allspice
- 1/8 tsp ginger
- 1/2 tsp kosher salt
- 2 apples, peeled and core removed, chopped
- 1 cup sugar
- 1/3 cup brown sugar
- 3/4 cup butter, room temp
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup walnuts, chopped
- 1/2 cup applesauce
- 3/4 cup milk
Preheat the oven to 350 degrees. Spray 8" cake pans with nonstick baking spray (will fit a 9x13 too). In a mixing bowl mix the sugars, egg and butter for 3 mins. Add the milk, applesauce and vanilla. Add all of the dry ingredients. Fold in the walnuts and apples. Bake until the toothpick comes out clean approx 30-35 minutes. Tops will be lightly browned. Cool completely.
Ingredients Frosting
- 8oz cream cheese
- 1/2 cup of butter
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 1/2 cup caramel (note on making your own below)
- 1/2 tsp cinnamon
Mix all the ingredients together in a bowl until smooth and top the cooled cake. NOTE: making an easy caramel. Add sweetened condensed milk to a stock pot and cook over med/low heat until light golden brown. Let cool some. Enjoy!
