Winter Favorite: Black Eyed Peas

Black-eyed peas, also known as cowpeas, are a staple ingredient in many cuisines around the world, particularly in the southern United States. These small, cream-colored beans have a mild, slightly nutty flavor and a tender texture that makes them a versatile ingredient in a variety of dishes. Black-eyed peas are also rich in nutrients, including protein, fiber, iron, and folate. One classic way to prepare black-eyed peas is to simmer them with ham hocks or bacon for a savory, hearty dish that is perfect for serving on New Year's Day or any other time of the year.

In this recipe by @firehousegrub, we will show you how to make a delicious and easy black-eyed pea dish using our Dynasty Chef Knife that is sure to become a family favorite.

Ingredients:

  • 1/2 lb bacon diced
  • 2 yellow onions diced
  • 2 jalapeños deseeded and diced
  • 1 tbs minced garlic
  • 3/4-1 lb of smoked sausage sliced (I used venison German sausage)
  • 3 15.5oz cans of black eyed peas
  • 2 cups of chicken broth
  • 5 cups of chopped greens
  • @tonychacheres original seasoning

Instructions:

  1. Brown bacon in skillet. Remove bacon but leave grease in pan.
  2. Add onions and jalapeños. Cook until translucent. Add in minced garlic. Cook for another minute or so. Remove from pan.
  3. Add smoked sausage. Cook until brown on both sides.
  4. Add in bacon, onions, and jalapeño mixture. Stir to combine. Add canned black eyed peas. Stir to combine.
  5. Add chicken broth and season to taste with @tonychacheres. Bring to a boil and reduce to a simmer. Simmer on low for 20-30 minutes and let those flavors combine!
  6. Add chopped greens. Stir to combine. Continue to simmer until greens are nice and tender (about 15-20 minutes). Remove from heat and serve!
